Mmmmm dinner
May. 5th, 2003 08:00 pmChicken wrapped in bacon and baked in tomato and herb sauce, with fresh basil to be added at the last minute. Garlic and cheese and mustard mash. Carrots with orange zest, black pepper and butter, and mange tout. And that's just me looking at the weirdo leftover bits and pieces in the fridge to see what I could find. I'm impressed. I hope it all tastes as good as it looks, especially after the cheesegrater demanded blood sacrifice.
Going back to food shopping by internet, since car is currently un-MOTed, so that's how the fridge is being restocked tomorrow. Glad to catch my mum and dad by phone and jaffa on irc. The former are coming to visit next w/e which should be nice, especially if the weather stays good so we can just sit in the garden and potter or something.

Date: 2003-05-05 01:57 pm (UTC)Two chicken breasts, four slices of bacon, wrap each breast in two slices, put in an oven proof dish, tip on a 400g tin of tomatoes, sprinkle on dried herbs (I used oregano), put in a medium oven (gas mark 5, I'd guess around 180C would do) for around 40 mins. To serve put the chicken on two plates, add a handful of torn up basil leaves to the tomato sauce and stir in then pour over the top of the chicken.
A really good smoked bacon sliced thickly would have worked even better. And sometimes I slice the chicken breasts open and stuff with more chicken minced with garlic and mushrooms before wrapping them, or just add the garlic and mushrooms to the sauce, but this is the really easy version.
