You can kill cockatrices; you just have to pick up a wand that's guaranteed to do the job in one swift blow.
The trapdoor just takes you into a random square in the dungeon. Judging from the dungeons of less socially-connected people — which end up being quite small and disconnected — if you use the trapdoor enough times it will eventually take you into one of the cut-off bits[0]. Of course, if your dungeon is quite large compared to the number of isolated squares, it could take a very long time before this happens. Once, though, I went through a trapdoor and ended up in exactly the same room, complete with the trapdoor I'd just gone through. [0]The Dungeon of Shadowphiar (http://shadowphiar.livejournal.com/28087.html?thread=45495#t45495) is partitioned into seven small pieces and I've been to all of them through sufficient use of trapdoors. It's difficult, though, because the trapdoors are randomly placed each time you start the adventure and not all the pieces have trapdoors in them (though fortunately the 1x1 pieces all do).
